Happy National Daiquiri Day🍹!!!

What a coincidence that it just so happens to also be Thirsty Thursday, match made in heaven😇! I must say, Daiquiris are not drinks that I make a lot so I really had to think about which route I was gonna go here. I wanted to opt out of the obvious strawberry daiquiri recipe, and besides, I’ve been overloading you with strawberry recipes lately (and there’s another one coming this weekend🤭sooo…) Then I got thinking of our trip to Mexico a while back (Hey Laur🙋🏻) well, they were mango margaritas but we’re making margs next week SO Mango Daiquiris it is! Mango mint daiquiri with mint leaves , lime wheel and straw

When I got to taste testing, it’s like there was a little something missing! The texture was great, perfect sweetness with the mango, tartness with the lime, kick with the rum…🤔… I looked out my kitchen window and spotted my herb garden and it hit me, MINT! That’s exactly what was missing! The mint brings the perfect amount of freshness, not overpowering at all, it kinda just hits you at the end. Plus, it makes beautiful little green speckles throughout that bright orange colour, so pretty. Isn’t a cocktail better when it’s pretty? Anyways, this is sooo refreshing!!! It would also make a delicious mocktail, just omit the rum and add more pineapple juice!  

I used my Vitamix for this so the texture was so perfect and creamy! A regular blender would also work great, if it gets a little to thick you might have to add a little extra pineapple juice to loosen it up (or rum… you pick😜)

This recipe serves 2 so just double or triple it if you want to make more, here it goes!

  • 2 Cups frozen Mango chunks (it’s important to use frozen mango here, texture won’t be the same with fresh! You could totally garnish with some fresh mango!)
  • The juice of 2 limes
  • 4 Ounces white rum
  • 2 Ounces pineapple juice (you might need a little extra depending on the blender your using. Also, I buy the little cans of pineapple juice instead of the big bottle, they are perfect for making cocktails.)
  • 10 Mint leaves
  • Pinch of salt

Mango Mint Daiquiri garnished with mint leaves with bacardi bottle Blend everything up and serve immediately! If you make a double and triple batch and you don’t serve it all right away, keep the blender directly in the freezer and give it a wizz before serving! 

I didn’t use any additional sweetener in this because I personally don’t think it needs any!! The mango and pineapple juice have so much natural sweetness it’s delicious on it’s own really! But if you want it a little sweeter, go for it! You could use a regular simple syrup (or the mint one from my Minty Bourbon Lemonade), I would suggest adding 2 ounces to the recipe above!

It’s calling for another beautiful sunny day today, and my Hubby’s on vacation for a few days, so I see a big bowl of guacamole🥑 and a pitcher of Mango Mint Daiquiris🍹 on the menu for tonight😍!!!

Ingredients

  • 2 Cups frozen Mango chunks (important to use frozen mango)
  • The juice of 2 limes
  • 4 Ounces white rum
  • 2 Ounces pineapple juice
  • 10 Mint leaves
  • Pinch of salt

Instructions

  1. Add all the ingredients to a blender* and blend!! It’s as easy as that!
  2. Divide into two glasses, serve immediately and enjoy!

Notes

*I use a Vitamix so it blends everything up really nicely but if you don’t have a high performance blender, you might need to add a little more pineapple juice.
